Choux Closet

Choux (pronounced “shoe”) is a French word meaning cabbage since the baked puffs resemble small cabbage heads. It refers to the airy, light dough used for cream puffs, éclairs, Paris-Brest, religieuse, etc. These gourmet, French style delicacies exhibit the art of classical French pastry.
